Cold smoke generator

How to make a smokehouse, using a cardboard box and a few cheap, readily available items.

*Please note that this will only be suitable for cold smoking*

Cardboard Box

Find a good, sturdy cardboard box, measuring approximately 55cm High x 50cm x 30cm, this will be suitable for 2 wire racks measuring 40cm x 25cm like the ones shown Here.

Cut a small (20mm x 20mm) hole in the top corner of the lid (this is where the smoke will be allowed to escape).

Cut a hole at the bottom of one of the sides, large enough for the ProQ™ Cold Smoke Generator to fit through easily. Only cut along 3 sides (dotted lines), as you will need to be able to close the flap, once the Cold Smoke Generator has been placed inside.

As long as the box is kept dry, it will last a fairly long time.

Baking Tray

A flat, metal baking tray is positioned at the bottom of the box (don't let the wife see).

Although the smoke generator produces cold smoke, it acheives this by burning wood dust, so there is an element of heat, the baking tray will prevent the box catching fire should something go wrong. With this in mind, it is important that you do not try to use this set up indoors, as not only will the smoke permeate through everything in your house, it does pose a fire hazard.

Other heat/ flame proof materials may be used as a substitute, but we recommend the metal baking tray, as it is something we have tried and tested.

Wooden Dowling

Next part of the assembly involes pushing 4 wooden dowling rods through the sides of the box. These should be about 10mm in diameter and long enough to protrude out of the box on either side.

We've tried other substitutes for the dowling (some really long, flat stainless steel skewers worked a treat), but dowling is inexpensive and readily available.

Racks

You're going to need 2 x Wire Cooling Racks for the food to sit on.

Place the racks onto the wooden dowling (these should be clean and dry before use), making sure that they are secure, as you don't want your food falling off halfway through.

Your cardboard box smokehouse is now ready for use. Lay food on the racks, close the lid and once the ProQ™ Cold Smoke Generator is lit and smoking, pop it through the hole in the bottom. Make sure it is sitting on top of the Baking tray.
